Support Healthy Inflammatory Responses with Stuffed Bell Peppers

One of my favorite and easiest meals to prepare that supports my body and its inflammatory responses is this bell pepper recipe!

Ingredients:

  • 1-2lbs ground beef, chicken, or turkey
  • 6-8 bell peppers (I use multiple colors)
  • 1 24oz container of cottage cheese
  • Italian Seasoning
  • Garlic Powder
  • Chili Flakes
  • Oregano
  • Paprika
  • High quality sea salt
  • Black pepper
  • Cooking spray (I use avocado)

 

Directions:

  • Wash the bell peppers and cut the tops off. Remove the seeds.
  • Place the peppers in the air fryer and spray them lightly with cooking spray. Season with salt and garlic.
  • Cook the peppers slightly at 375 degrees for about 4 minutes.
  • Cook the ground meat and season with salt, pepper, garlic powder, and paprika (or whatever you like).
  • Mix the cottage cheese with Italian seasoning, oregano, chili flakes, and garlic powder.
  • Once finished, fill the slightly cooked peppers with ground meat and top with the cottage cheese mixture.
  • Cook the filled peppers at 375 degrees for 10-12 minutes until the tops begin to brown and enjoy!
