Feel Good Foods: The Easiest Instant Pot Chicken Soup

 
 
Chicken soup is a classic. My recipe delivers a soul-warming dish in half the time.
 
Soup is also great to indulge on during the menstrual phase of a woman's cycle, and is very nourishing to the body.
 
Ingredients:
 
  • 2 large chicken breasts
  • 1 medium onion
  • 2 1/2 cups any assortment of veggies you'd like (Brussel sprouts, green beans, cabbage, carrots, etc)
  • 5 cloves garlic (minced)
  • 1 box gluten free pasta (Ancient Harvest is our favorite brand)
  • ~2 tbsp high quality sea salt
  • ~2 tbsp black pepper
  • 2 tbsp crushed red pepper
  • 1 tbsp minced onion
  • 1 tbsp oregano
  • 3 bay leaves
  • 2 tbsp olive, coconut, or avocado oil
  • 8 cups water (this recipe only calls for water, no broth-AMAZING though!)
 
Directions:
 
Press the saute function on the instant pot. Wait until it reads "hot", and add the oil and onion. Stir until the onion begins to be transparent, about 5 minutes. Add the minced garlic and carrots, and cook for another 1-2 minutes, or until the garlic becomes fragrant. Put the chicken breasts on top of the veggies, and season generously with salt and black pepper. Add the water, and season with crushed red pepper, oregano, minced onion, and the bay leaves. Press the cancel function, close the lid, and make sure the valve is in the "sealing" position. Press the manual button, and set the timer to 20 minutes. Once the timer goes off, allow for a quick release and open carefully. Remove the chicken to shred. Press the saute function again, and add in the pasta. Stir continuously until the pasta is fully cooked. Add in the chicken, stir, and serve!
 
*For added flavor, squeeze fresh lemon juice over the top.
*Always adjust seasoning to taste. You may need more than the listed amount.
*This can also be done on the stove at a medium heat. The steps are in the same order, I just cut up my chicken breasts before adding them to a skillet to quickly brown them, then add them to the pot to finish cooking before adding the pasta at the very end. I also sometimes add an organic, low sodium chicken broth to replace 4 of the 8 cups of water if I want to add more nutrients.
